Café Rio Mexican Grill and The Cocoa Bean Cupcake Café will join Papa John’s Pizza in the NorthPoint Apartments food court, said Trent VanderSloot, general manager of NorthPoint Apartments.

These restaurant additions will be completed the first half of September, just in time for Fall 2015 semester, VanderSloot said.

There are currently eight Mexican restaurants in Rexburg, according to the Whitepages website, one of which is Costa Vida, a restaurant similar to           Café Rio.

The Cocoa Bean addition is the restaurant chain’s second location in Rexburg, according to a post on NorthPoint’s Facebook page about the incoming restaurant.

VanderSloot said a fourth restaurant, Port of subs, was just announced.

Port of Subs currently has four locations in Idaho, two in Boise and two in Nampa, according to the Port of Subs website location finder.

VanderSloot said the construction on the Rexburg restaurant restaurant will be completed at the end of August.

VanderSloot said these new restaurants would create a great environment for BYU-Idaho students and other members of the community.

“We’ve got a pretty good collection that has a good list of options for the community,” VanderSloot said.
