Emma’s Kitchen reopened June 5 after being closed May 30 due to licensing issues.
Brett Jenkins, a junior studying business management and student CEO of Emma’s Kitchen, was involved in the licensing process that allowed the restaurant to reopen.
“Paperwork went great,” Jenkins said. “The health inspector came in and everything passed as it is set now.”
Jenkins said the staff of Emma’s Kitchen was confident that the restaurant would pass the inspection.
“We were scheduled to open [Wednesday], assuming that we passed,” Jenkins said. “Everything was prepared correctly at the right temperatures, so [the inspector] got my signature, we passed, and we opened OK.”
Emma’s Kitchen is open Monday through Friday from 11:30 a.m. to 1:30 p.m. It is located in the John L. Clarke Building in room 341.
Jenkins said the management of Emma’s Kitchen is planning to expand both its menu and its locations in the near future.
“We’re looking to get some different types of flavors on our pulled pork because we use it for our salads and wraps,” Jenkins said. “We were looking into getting different types of meat.”
Jenkins said the management of Emma’s Kitchen is considering putting a food cart outside the Joseph Fielding Smith Building to sell premade Paninis to students.
Emma’s Kitchen is run by business management majors as part of the Integrated Business Core classes.
